Special Instructions

  1. step mash 122*F for 20 minutes for protein rest
  2. add the cacao (powder)
  3. step mash #2 135*F for 20 minutes
  4. add 1/3 of the toasted coconut flakes
  5. final saccarification rest at 154*F for 45 minutes
  6. mash out/sparge with 170*F until boil kettle holds pre-boil volume
  7. at boil, add 16 oz toasted coconut ,boil 60 minutes while observing hops schedule.
  8. chill to 70*F and rack to primary fermentation vessel
  9. save 1.5 qts wort to add back at bottling.
  10. after fermentation has reached 1.010 ,rack to larger secondary on top of 16 oz toasted coconut,1/4 lb fresh ground coffee , and 4 oz cacao powder
  11. leave in secondary for 2 weeks until fermentation stops (1.007)as secondary ingredients will restart fermentation.
  12. add 1/4 tsp pure vanilla extract to bottling bucket with 1.2 qts the saved wort (speiss)allowing any yeast /sediment in saved wort to be omitted, stir gently and bottle.

tasted fermented beer before bottling, extremely close to cloning Funky Buddha's "Last Snow". maybe even better .
