  1. step mash 122*F for 20 minutes for protein rest
  2. add the cacao powder
  3. step mash #2 135*F for 20 minutes
  4. add 1/3 of the toasted coconut flakes
  5. final saccarification rest at 154*F for 45 minutes
  6. mash out/sparge with 170*F until boil kettle holds pre-boil volume
